SNAP Pumpkin Cupcakes

Ingredients

1/4 cup SNAP

2 1/4 cups flour

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

3/4 cup milk

1/2 cup butter, softened

1 1/3 cups brown sugar

2 eggs

1 cup pumpkin purée (fresh roasted pumpkin is best)

Directions

1. Preheat oven to 375 degrees.

2. Sift the flour, baking powder, baking soda, spices and salt together. Combine the milk with SNAP.

3. In a mixing bowl, cream together the butter and brown sugar until light and fluffy. Then add the eggs one at a time, followed by the pumpkin puree and mix well. Add 1/3 of the dry ingredients, the 1/2 of the SNAP/milk mixture.

4. Once incorporated, add another 1/3 of the dry ingredients followed by the remaining SNAP/milk. Add the rest of the dry ingredients and mix until everything comes together.

5. Divide batter evenly into lined cupcake pans. This recipe makes 18.

6. Bake for about 20-25 minutes or until a cake tester comes out clean.

7. Allow to cool before topping off with your favorite frosting (we have a weak spot for chream cheese frosting!).
