Paris and Bangkok are, respectively, two of the finest, most influential cultural institutions in the world – especially when it comes to food. NOWNESS and curator Thomas Erber came together to recruit one of Paris’ best chefs – Septime chef Bertrand Grébaut – for the Cabinet of Curiosity residency series. In this case, the chef was transported from his cushy Paris abode to Bangkok, applying his fine dining sensibilities to local ingredients for a 10-day trip.
