In our latest instalment, we focus on the fashionable nature of food and the fast-paced emergence of culinary trends. Steve Sharples is the general manager of Flip Burger Boutique and notes how the restaurant, pioneered by Top Chef competitor Richard Blais, was the first upscale burger establishment to appear in the city. The elevation of the burger concept is evident with the use of red wine jam, pickled shallots and soy truffle vinaigrette on their signature burger. Wes James, owner of Fat Matt’s, notes that despite gastronomic evolution an identifiable food is paramount to a city’s identity.
